Possibly perfect cheeseburger

The Plimsoll is on so many ‘best burger’ reviews it’s almost obscene that it’s taken me nearly a decade of my burger gastronomic adventure to get out there. But thanks to an invite from local resident and corporate affairs industry watcher, Helen Dunne, I had a good reason to discover quite how accessible Finsbury Park is from Central London and give the gastro-pubbed refurb of the old, Auld (it used to be the Auld Triangle, so that was a pun), Irish pub and its famous ‘Dexter’ cheeseburger. Which I’m told is named for the Irish cow breed used for its meat, not the storied serial killer…

The pub is apparently under the management of chefs Jamie Allan and Ed McIlroy, who previously ran a pop up called the Four Legs @ the Compton Arms elsewhere in North London. But I couldn’t find a website, so blame me for citing a three year old Guardian article if I have this wrong… 

The order

If you want chips, this is the wrong place to be. I had the Dexter cheeseburger (beef, cheese, burger sauce, pickles, fresh onion, crispy onion, brioche – £14), and we shared a pile of ‘greens’ (it’s a Caesar salad of sorts, at £11) and ‘fried potatoes with aioli.’ (£7).

The meat of it

OMG. You can immediately see the butteriness of the bun; the double onion combo is spilling out the sides. The home made pickles speak of sweet and sour pleasure; the cheese is melted perfectly on a beautifully charred patty… and the glisten on the brioche. Wow. If looks could cause type two diabetes…

In cross section you can see the build is pretty much perfect. The plate remains clean despite the healthy amount of burger sauce that’s within, the bun is super soft but providing structure, the meat is coarse ground and the assembly precise. There’s a lot to play for.

First bite… soft bread, robust, perfectly seasoned bite to the patty and a melty, meaty centre. The sweet burger sauce and unguent, umami-rich cheese contrast beautifully, and the double onion combo gives you crisp and crunch in one. The pickle adds fresh, bright sweetness with a sour pickle edge and tastes of the summer day on which it was picked. The mouthfeel is fantastic, the flavour sublime.

It’s just a glorious combination. It feels and looks small but this thing is dense and packed with flavour. The first bite loads my hands with grease and burger sauce and I don’t even care; I switch over to cutlery to preserve my dignity and my shirt, and to draw out the luscious sensory experience. Every bite of this is like injecting pleasure into my taste buds; I don’t understand the appeal of class A drugs, but this… This I can see myself getting withdrawal symptoms from. It’s glorious.

On the sides…

I love that the salad was billed as “leaves with vinaigrette”; this felt like a loaded Caesar salad, dense with Parmesan and a slick sweet and savoury dressing – which is what you’d expect for the money. I wouldn’t exactly call it bright and fresh – this is a rich, rich salad – but it was a lovely contrast to the burger.

The potatoes – are perfectly tender and simultaneously crisp all over. I didn’t expect to love them – I LOVE chips – but they are beguiling, and provide a heft that ensures you walk away full – we didn’t finish one portion between the two of us.

Burger rating – 5/5 – this deserves its billing as one of the top burgers in London. Absolutely extraordinary.

It’s about 4 minutes walk from Finsbury Park tube. Take the Station Way exit. Go tomorrow; Finsbury Park is < 10 minutes from Kings X on the Victoria Line so there’s really no excuse for anyone who’s based in London.

Honest Burgers: reprise, guest review

I’m honoured to be a guest writer on Burger Source

My first impression of Honest Burgers was: “Now this, this really is a burger place.” As I strolled through the door, the scent of freshly toasted buns wafted through the door. The menu was relatively simple. Chicken options, Beef options, and vegan options (if you like that kind of stuff). 

Once the burger arrived I had to look at the cross section. The exquisitely layered patty, cheese bubbling down the fresh bacon, and to top off this vision of perfection, caramelized onions steaming. Here it is.

And the burger before I sliced it in two.

 
Bun – 4/5 – slightly too soft for me, some of the juices leaked through
Build – 5/5 – can’t complain about anything
Burger – 4/5 – couldn’t taste the cheese as there were too many onions
Taste – 4/5 – a bit too sweet for my liking (Though undoubtedly from the caramelized onions)
Sides – 5/5 – both the onion rings and the rosemary fries were fantastic

Supra Burger, Salusbury Road, Queen’s Park

I was meeting some friends in the area and they mentioned Supra Burger, a pop-up installation in the local high-end French style healthy rotisserie chicken restaurant. I could try to tell you more about how such a juxtaposition came to pass but I think it’s more joyous to let Supra tell you about themselves in their own words, because honestly – this is possibly my favourite ‘about’ content for any restaurant, company, charity or government – ever. The order

I always try to get a bacon cheeseburger – or closest equivalent – when I order. This place, however, had an eponymous Supra Burger – exactly the same as their bacon cheeseburger but with additional pickle and supra sauce (alongside double smash patty, melted American cheese, and a toasted brioche). So I did the only sensible human thing: I asked them to add bacon to a Supra burger. It was served with french fries and we shared a portion of tenders.

Sauce seems to be a fairly central feature of the menu; so we had four (indulgent, but… when in Supra) – we ordered (off menu) the burnt chilli, as well as the ‘spicy’, the n’duja and the garlic mayo. More on all of the above shortly.

The meat of it

Let’s take a look.

This is immediately promising. Toasted brioche, crisp streaky bacon, healthy slices of pickle, brilliant char on the meat, fantastic melt on the cheese, tidy plating. Let’s continue.

In cross-section, the near perfection continues. The bottom bun is a little compressed, but it’s holding up. The top bun is light and airy with a good crumb. The burger meat is tender bur robust against the knife. The Supra sauce, a vibrant orange, spills out, promising… well, something.

First taste… you can actually taste a delightful char to the burger – it’s crisp on the outside, and tender on the inside. Just like Dime bars (let’s see if my audience gets this reference). The bacon is crisp as it promised; the cheese binds and adds savoury umph to every mouthful – but isn’t overwhelming. The sauce adds moisture, sweetness and an unctuous mouthfeel. The pickle adds bright freshness, sweet and sour sparkles around the edges of everything else. Meat, cheese, sauce, bacon, bread, pickle – all provide separate inputs into a glorious gestalt that honestly just tastes of joy. This is one of the best smash burgers I’ve ever had, and I would have it again RIGHT NOW if I wasn’t so full. It was a thrill. I had to search for any notes – and if I had to give one, it’s that I prefer a thinner sliced, fresher pickle – like those quick-brine ones you can do in the summer at home with cucumbers, in a sweet-salty base. But it wasn’t enough to deduct a point (spoilers).

On the sides…

The tenders were… a bit meh, tbh. Juicy, well fried, but lacking a little on the seasoning front and needed to be sauced for flavour. Which is just as well as we had plenty of sauces!

The fries were pretty much a paragon of a modern french fry – crisp, well seasoned (salt and pepper) and pairing well with the sauces.

On the sauce front – I didn’t get photos of them all – pictured is ‘burnt chilli’ (sweet with a edge that definitely tasted of chilli), a ‘spicy’ sauce that had a deeper red lustre to it and chunks of peppers – tasty, savoury, lightly spicy but more conventional. The garlic mayo was good – strong garlic flavour, more crème fraiche in texture than mayo. The n’duja sauce tasted a bit like the burnt chilli, but with chunks of n’duja in it – so not bad in any way, really. I’m not sure this was £10 worth of sauce, but we definitely enjoyed the variety. A must for the tenders, and a nice complement to the fries.

I had a mixed fruit juice to drink (sorry, again no pic, what was I thinking!) – tasted mostly of apple, but was very nice for all that it had carrot and orange in it too.

Build – 5/5 – perfect construction
Burger – 5/5 – flawless
Taste –  5/5 – the parts were great and the whole was even greater
Sides – 4/5 – small deduction for lackluster tenders 

Value – 5/5 – £33 for burger, share of tenders, fries, drinks and service (which was super) felt very reasonable in this post-Covid, post-inflation era of eating out.

Burger rating – 5/5 – this is up there with the best of them.

Tolerable cheese burger & fries

It was a convenient place for an industry friend and I to meet, and burgers were not top of mind. But they had them, and whilst I’m not sure of the connection between the bar’s Victorian-era explorer theme and cheeseburgers (maybe they explored NEW YORK CITY), I wasn’t complaining. Now, for no reason, this clip from WHAT WE DO IN THE SHADOWS.

The order 

Basics – cheeseburger and skin on fries. The burger was billed as follows: a beef patty, American cheese slice, pickles, lettuce, tomato, mustard, ketchup, pretzel bun. The skin on fries – do what they say on the tin. Paired with a nice merlot.

The meat of it 

Let’s take a look.

That’s not a bad stack. Decent shine on a soft bun, bright salad supporting the lower bun from the patty, amazing melt on the (distinctly unamerican looking cheese – that’s not nearly Donald-Trump-tan orange enough for pureblood American cheese singles). But – nothing to complain about yet.

Cross section…

Right, the lighting is bad so it may be hard to tell but there’s good and bad here. Good – stack, bun sturdiness/pliability balance, the layering in the stack is good and evenly distributed, the meat is coarse ground and loosely packed – so far, so good really…

First bite…. soft bread, crisp salad, sweet pickle, decent bite to a – slightly overcooked – patty, the cheese added salt and the ketchup/mayo adds moisture. It’s not bad. But as you chew – you realise the meat is more than a little bland, and overcooked, which diminishes from the mouthfeel and flavour of what is otherwise a pretty well constructed burger.

The skin on fries… were fine. Decent seasoning, not uniformly hot or crisp, but decent at their best and still OK at their worst. Dunked in the provided mayo and ketchup (nice touch), these were a good accompaniment to the main meal, and came in a decent sized portion.

Build – 5/5 – well constructed, there was balance in the force
Burger – 3/5 – lack of seasoning and overdone-ness are significant faults
Taste –  3.5/5 – just not enough flavour or moisture to the burger. Slightly dry and underwhelming.  
Sides – 3.5/5 – solid but ultimately forgettable   

Value – 3/5 – £12.5 for the burger, another £4.50 for the fries, plus drinks plus side. Disproportionate to the quality.  

Burger rating – 3/5 – it was fine but the price, bland, overcookedness of it all knocked it down a few pegs from what could have been quite a good burger..

These things are all over the place – who knew? The cocktails and drinks did – to be fair – look amazing and seemed like the main event. Go, experience the quirky Americana – find your nearest here.

Foxden, Jerdan Place, Fulham SW6

High performing, meaty burgers with excellent sides

A friend said that someone had told him that Foxden was the second best burger in London, after Bleecker. Given that I really rate Bleecker, this was high praise and reason enough to trek out to West London to meet him there.

A “British burger restaraunt… [that] specialises in showcasing the best of British produce… with a field to fork ethos…” may sound worthy, but it’s a pretty no-nonsense diner that had more Deliveroo drivers waiting to be served than diners on the Tuesday night we sallied forth.

And a chef with an injured arm meant someone else (possibly the owner?) was behind the grill…

The order 

We went a bit bananas. Buffalo wings to start (6 for £8), and Jimbo and I shared the bacon cheeseburger (£12 – treacle bacon, cheese, lettuce, gherkin and house sauce), and the eponymous Foxden burger (£14.50 – Beef Patty, Slow Braised Pulled Beef, Truffle Cheese Sauce, Rocket & Red Onion Jam). We split three different catgories of fried root vegetable – sweet potato fries, regular fries, and ‘rosti-fries’ – all between £4 and £5 each. It’s heartwarming to be asked, straight out, when ordering – if we wanted the burgers medium or well done.

Medium, obviously, we’re not philistines.

The meat of it 

The Foxden – on the left – is a good looking burger. Toasted, glossy bun, a hint of the fresh stuff, good proportions of beef, pulled beef, cheese sauce and onion jam. The bacon cheese burger is a little more modest – well formed, but slightly less elegant on the plate, and with a visibly smaller patty.

Let’s take a cross section (or two).

There is little to complain about in cross section. The burgers are beautifully cooked, and you can see the brilliant, coarse ground meat. The buns are sturdy but not heavy, glossy but not – I think – sweetened. The balance of toppings (and bottomings) in the stack is perfect.

To the taste: both burgers are made with high quality, possibly dry-aged meat. There’s the light funk of ageing to them, and a rich, strong, beefy flavour. Now, let’s split the review.

The bacon cheeseburger first. FIrst bite – soft, melty meat. Light freshness from the salad, faint sweetness and chew from the treacle bacon, and a light, unctuous hint of salt from the cheese. It’s good, but not perfect – a harder sear would have given more textural contrast, ditto a crisper bacon choice. The cheese is too subtle, something stronger would have compensated for the slightly underseasoned patty. But it’s marginal – this is a good burger.

The eponymous Foxden – is a really odd experience. I’m not really one for pulled meat on a burger – it adds softness to softness and the texture balance often feels off, to my palate, and that was true here. But it was a strange sensation – the dry-aged-style funk of the meat was compounded by the truffle cheese sauce (or maybe it was all the cheese sauce and the meat wasn’t aged at all, I don’t know) – making for a strong, rich, deep flavour that will not be to everyone’s taste. The pulled beef added more savoury bite than the burger patty, which was unexpected – I’m more accustomed to BBQ pulled pork and was expecting it to be sweet. I think, if you like this sort of thing, it was a very fine specimen. If – like me – you like texture, crunch, and slightly less richness in your burger – you may find this a bit overpowering.

Sides and sauce-wise…

  • The regular fries were great. Crisp, well-seasoned, fluffy, brilliant on their owned or dipped. A decent portion too.
  • The rosti-fries were over-sold. They are tater tots and/or tiny hash browns. There’s little rosti to them. But they are extremely crisp on the outside, extremely fluffy on the inside, and very heavily seasoned – garlic, onion salt, possibly, but definitely paprika – rich, crispy, fluffy, delicious. Bit maybe a bit heavy on the salt.
  • The buffalo wings were strong – crispy, rich, juicy, and slickly coated in that perfect Uncle Frank’s hot sauce/butter combo (pretty sure it was Frank’s).
  • The sweet potato fries – are about as good as sweet potato fries get, and not photographed.

With a beer each, it came to about £28 a head including a 10% tip – pricey, but not bad value for the spread.

By crazy random happenstance, on my way home, I walked past what used to be the dilapidated street where my previous company’s office used to be, many years ago… to find it completely gentrified. Still, The Atlas lives. Huzzah!

Double Standard, Kings Cross, London

Brilliant burger, capital chicken bites, fantastic fries, cool cocktails

The Double Standard, in the Standard hotel, has achieved a number of plaudits and made a few ‘best burgers in London’ lists, and as a supremely convenient central location for all my friends, it was a sensible place to go.

The order 

The burger itself is described with little ceremony – it is simply ‘the burger’, served with bacon and blue cheese, and fries. We shared a side of chicken bites, and mac and cheese, and tried a brace of cocktails.

The meat of it 

There’s nothing overly exciting about the plating, but its competent:

(Apologies for the lighting, it’s a stylish, dimly lit venue). It’s not easy to see, but there’s a brilliant melt on the cheese, a strong char on the burger, the bun is soft, the bacon in clear evidence. Lots good so far.

In cross section…

There’s a brilliantly coarse grind to the meet; the ratios of meat, bun and toppings are excellent, though it is cooked a bit more than I would choose it – no trace of pink – the burger is not dry, possibly thanks to a(n un)healthy fat/lean ratio in the blend.

First bite – a solid crunch from a hard char, the bun is as soft and pleasantly nondescript as you’d expect – lending structure more than flavour – and a light dry-aged funk from the meat comes through. The meat is reasonably juicy, but helped by a measured ration of relish, which also provides a mildly spiced sweetness. A second later, and you are hit with the umami, from the strong but odourless blue cheese and the chewy, substantial bacon – back bacon, cooked well but not crispy – and it binds beautifully. The contrast between the salt and the sweet, between the crunch of the meat, the chew of the bacon and the soft bite of the bun – is really excellent. My only note is that – had the patty just been a smidge over toward medium, it would have boosted the experience even more.

To the sides; the fries are superb, crisp exterior, fluffy interior, well seasoned but otherwise little to remark. Improved by both ketchup and the garlic aioli that came with the chicken bites. The chicken bites are a thing of legend (we ordered a second portion, despite the £8 price tag) – chunks of juicy chicken thigh, brilliantly seasoned, crisp and spicy and juicy all at once. The garlic aioli was an excellent contrast, adding a slick, garlicky sweetness with a dunk. The mac & cheese was mac & cheese-like, credible and competent but about as exciting as it always is – which – to me – is limited.

Cocktails are half-price on Monday and Tuesday and were good value at that price – the pina colada was punchy and delicious. The Elderflower Collins was meh (who aims for ‘fresh’ instead of ‘sweet’ with an elderflower drink?), but friends also enjoyed the Negroni and the Ginger Magarita.

All in all, an excellent experience, in a busy, trendy, highly styled environment, with decent service (slower on food than drink), tasty food, interesting drinks and in a useful, albeit unexpected location (the hotel is MUCH cooler than you would expect).

Morty & Bobs, Coal Drops Yard, Kings Cross

Good burger, excellent cocktails, lovely atmosphere

Kings Cross is a pretty convenient location for a few of us to meet up, and the redevelopment North of St Pancras is… well, pretty wonderful. Wide, open, modern, highly stylised – it’s absolutely buzzing, even on a Wednesday night.

Celebrating a friends birthday, we chanced upon Morty & Bob’s, and it happened to have a burger on the menu, so…

The order 

Bob’s burger [sic] & fries features an aged prime patty, garlic mayo, lettuce, tomato, pickles and a brioche bun. I also had a glass of wine, and a cocktail (their take on an old fashioned). Pudding… I was pitched a pear compote cheesecake. Let’s see..

The meat of it

First impressions, pretty good. Those fries look crisp and well seasoned (they are, though a smidge… stale?). The burger’s bun is glossy, there’s strong melt on the cheese, the salad looks bright, crisp and fresh, the bacon looks thick but crispy… Let’s take a closer look.

The bun – dense and possibly slightly oversized. The salad – over thick slices of tomato destabilise the stack. The meat – coarse ground, cooked to a perfect medium. Excitement… To the taste.

The meat is lovely – beautiful texture, lovely exterior crust, soft and juicy interior, with that light funk from the dry ageing. Lovely mouthfeel, but ever so slightly underseasoned. The bacon is a joy, and with the cheese (collectively adding an additional £3.50 on an already £14 burger and fries) provide the necessary umami to partially compensate for the patty, so I was glad of the indulgence. The mayo adds a smooth, velvety tang from the garlic that’s welcome; a crisp crunch comes from the salad and the hint of sweet sharpness from the pickles is well distributed. The bun… is cold, and slightly out of proportion. Too much bread, and what there was should have been toasted. But it works together surprisingly well and makes up for its shortcomings via the overall experience. It’s a good burger, and a pleasure to eat it.

The fries, as I’ve said, were solid. They seemed slightly stale, like they’d been left out too long between dips in the fryer, but they were well seasoned, suitably potatoey, and lovely dunked in a pot of mayo or ketchup.

As to the cocktails? Really interesting takes on traditional cocktails on the menu. Served fast, in a lovely atmosphere, with attentive waitstaff. A great overall experience.

Pudding? There were a few options and I had a cheesecake that was recommended to me. It was… fine. But not the right pudding to follow the burger. I was envious of my friends chowing down on a flourless brownie with ice cream.

Hunworth Bell, Hunworth, Norfolk

Enjoyable despite its limitations

The Hunny Bell is a local favourite, in the middle of nowhere in rural Norfolk. Rated highly on Tripadvisor, and by locals we know, it was a fun family meal out.

The order

I hadn’t intended to have a second burger in our holiday week, but the description of the HB double cheeseburger, topped with Emmental, served with onion rings, slaw, on a brioche and smoked bacon… well, it just sounded great. So I had to give it a go. We shared a carafe of Sea Change Negroamaro, a red wine whose billing features environmetnal activism, with a proportion of profits going to dealing with ocean plastics. Sold.

The meat of it

Let’s look at the main picture again.

The plating is tidy but a close inspection will show – a burnt brioche, unnecessary onion rings and a burnt edging on the bacon that bodes poorly… but it looks well assembled, and I’m intrigued.

In cross section, the errors compound themselves. These are thick patties, but cooked well done. They are far too big for the burger. The emmental is well melted and there’s an intriguing layer of sauce on the bottom bun… so, on to the taste.

Well, the burger is well seasoned. The crisp bacon adds excellent umami. The vegetables are crisp, fresh and sweet. The patties are a little dry, but the spicy mayo adds the required moisture and a lovely depth of flavour. There’s a wonderful smokiness to the whole thing.

Then… the whole thing kind of slides off the romaine slice and tomatoes at the base… leaving, in short, a mess:

The rest of it had to be eaten with cutlery, in two halves, split top and bottom. Ketchup helped balance the half without the spicy mayo, and yet somehow, the whole thing kept me wanting more. Despite almost everything going wrong with it, I still kind of enjoyed it. Though I think next time, the belly pork Amanda had is more likely to be on my order card.

The sides? The fries were well seasoned, standard french fries, but slightly undercooked. The slaw was soft – lacking all freshness and crispness – the mayo / dressing was just too heavy. But the onion rings were near-paragons of the form – lovely, crisp, well seasoned batter, sweet onion within… if they were a little greasy.

Giving notes on the whole dish:

  1. Don’t burn the bun
  2. Shrink the patties – 3oz each is plenty, 4oz each was too much
  3. Switch to a patty smash. higher fat ratio, melt cheese on each half as part of the build
  4. Go heavier on the delicious, animal-style sauce, consider adding some chopped pickle into it too for a bright, sweet crunch amidst it all
  5. Shred lettuce for a more stable base – the single leaf of romaine is pretty in theory, but irritating in practice
  6. Swap out the emmental for a sharp local cheddar
  7. Double fry the chips
  8. Find a new slaw recipe. It was bad.
  9. More onion rings. Because why not?

And the wine? Delicious. In both form and function. Highly recommend.

A breathtaking burger experience

Unlike many of the burgers I review here, discovered from word of mouth buzz or from other peoples’ top ten lists (or very occasionally, because I was pitched it by their PR folk), Yen Burger is a place that I just spotted, a short walk from my office, on the way to London Bridge. I was initially put off – Japan-spiced burger? What fresh hell of fascist-fusion cuisine was this? But a colleague was braver than I and passed on the recommendation when I was looking for a new local place to check out.

And so André and I decided to give it a go.

The burger’s origins start in the mind of food entrepreneur Yen Nguyen, who, apparently after success elsewhere in Germany and the UK (a Google search reveals little about her other than her association with Yen Burger), decided that the gap in London’s thriving burger scene was the Japanese twist. And so, Yen Burger was born.

Here’s the official spiel, from the website:

This brand new concept will offer premium Asian-influenced burgers. Starting with the ‘Yen Burger’ which features a 100% wagyu beef patty, fresh pickles, smoked turkey bacon, cheese and shiso leaf, it’s the ultimate fusion burger and a great introduction to Yen’s offerings. Other options include ‘The Finest Chick’ which combines coconut panko chicken breast and homemade slaw with the reviving shiso leaf and a zingy mango sauce…. Each burger is fresh made in-house from the highest quality Aberdeen Black Angus or Wagyu beef, 100% sustainable cod or vegetable alternatives.

The order

I went for the eponymous Yen Burger. 6oz of Wagyu beef, pickles, lettuce, red onion, ‘Yen sauce’, turkey bacon and shiso leaf. I don’t even know what a couple of those ingredients are, but I was excited.

We had ‘Dashi chips’ on the side (dusted with Paprika seasoning) and some chicken Gyoza because, why not?

The meat of it

Let’s take a moment to admire this.

Ok, so it’s maybe not the most beautiful burger you’ve ever seen at this point. But let’s admire the components. Thick cut pickles. Coarse, crusty burger patty. Bright, fresh shiso and onion. Perfectly melted cheese. And this soft, white, unsweetened bun, inviting you in.

In cross section, it becomes more special. The Yen sauce provides a sensuous coating. The meat is coarse ground, loosely packed and cooked to a perfect medium. The turkey bacon is there – subtle, but present. I coudn’t wait to taste this burger.

And OH. I was NOT disappointed. The Wagyu is so utterly, amazingly delicate it practically melts in your mouth. But not before you hit the crunch of the perfectly seasoned outer crust; the soft, plain bread providing structure but not flavour, complimenting the sweet/salty contrast of crust and rich, pink burger inner. The Yen sauce lubricates, a sweet/savoury glue. The cheese adds further umami, subtly, whilst the hint of smoke and crispiness is added by the turkey bacon; less powerful than the traditional pork variants. Additional sharp sweetness from the delicious pickles and crunch from the red onion. WOW. I had to slow myself down – I wanted to devour this and order another.

The Asian ‘spices’ – subtle. A hint of something of Japan in the background of the flavour profile. Nothing overt or tacky – this is a traditional burger with Japanese accents. Cooked to perfection, in perfect harmony with itself. Outstanding.

The dashi fries need comment. They look good, right? But seasoned fries can go wrong, I hear you say. They can be overwhelmingly flavoured and over-salted.

No, say I. Not in this case. The paprika seasoning adds flavour, sure, and these are well salted fries. But the exceptional richness of the potato flavour was unexpected – these are tasty fries – as is the perfect crisp exterior, and the soft, lush, fluffy interior. In absolutely perfect balance. Not a hint of greasiness, light, crisp and delicious. And, when the salt got a little much, Heinz came to the rescue.

The only dish that mildly disappointed was the chicken gyoza. Over-greasy from the fryer, the minced chicken within was dry and lacking in flavour. The soy sauce was strong and the balance felt out. Perhaps it was an indulgence too far.

Overall, an utterly extraordinary and unexpected experience. André reported that the Asian spiced burger was also excellent, and the £15 a head tab felt like good value for the feast (we shared Gyoza and fries between us).

At the start of Southwark Street, just by London Bridge, you’ll find this nestled to other burger joints; Honest Burgers and Breakfast Club, as well as Borough Market’s own Roast to Go. All are within a potato’s throw of here.

Fuel Shack, Food Court, Suria KLCC, Malaysia

A high quality burger that is still somehow reminiscent for the Ramly burger tradition

The founders of Fuel Shack write in their story of their determination to end the binary choice faced by Malaysian diners – of mass-market, low-quality, chain fast-food, vs., pretentious, expensive, upmarket high end burgers beyond the reach of most people. They wanted, they said, to end this with the introduction of accessible but high quality burgers served in a setting anyone could access. KLCC may be an expensive mall, but anyone can eat at the food court on level six, and anyone can get there easily enough.

The question: have they succeeded?

The order

I had the standard classic cheeseburger. Salad, mayo, 1/3rd lb grass-fed Australian beef patty, American cheese and a standard bun, with fries. RM16.80 or thereabouts for the privilege, with a drink. Or about £3. Certainly accessible by the standards of Malaysian high-end fast food, though a little more pricey than your Maccy D’s.

The meat of it

Whilst superficially this is good presentation, I have a few notes for fuel shack.

  1. Salad goes under the burger. It’s got to protect the bun from the meat juices.
  2. Cheese needs to be melted in. That slice of American cheese is practically solid.
  3. Easy on the mayo. More on this shortly

That said…

None of this hurts the burger too much. There’s a lovely crust from a hot griddle that gives a nice bite to the burger; the bun is soft but holds up well. There’s a saltiness from the cheese and an umami from the seasoning that reminds me – distantly, but in a good way – of the cheap (horrific) roadside Ramly burgers you get all over the country.

The cross section makes most of this clearer.

The interior of the burger is overcooked, but it’s not bad in spite of this – the meat is high quality and coarse ground, if somewhat compacted. The copious amounts of mayonnaise is applied with a kind of playdough applicator – with dozens of holes. There’s probably two full tablespoons of mayo in a single burger. Which is a lot. But it provides fake juiciness for the slightly overdone meat. The sweet/savoury balance isn’t bad, though the mayo overwhelms at times and I added a little ketchup to take the edge off. All in all, I’d say that Fuel Shack achieves its mission – this is a good burger at a reasonable price, distinct from fast-food, mainstream offerings as well as the high end offer, yet somehow something new in its own right.

As to the fries?

More or less unremarkable. Well seasoned, they cool quickly in the air conditioned environment and quickly achieve cardboard texture. That said, there’s a distinct potato flavour in there and they’re served in a sensible portion that doesn’t overwhelm. Crisp and tasty when hot, in a more potatoey- McD’s style. Completely adequate.
